- While the macaroni and cheese is boiling, heat the olive oil in a large skillet over medium high heat.
- Add the onion and salt and stir occasionally till the onions start to turn brown and caramelize.
- Add the beef broth and thyme, and cook until the broth is absorbed.
- Top your bowl of prepared mac and cheese with some of the onion mixture, sprinkle with a little swiss cheese and crushed croutons.
- Enjoy!

- Storage: Store any leftovers in an airtight container in the fridge for up to three days. Reheat gently in the microwave or on the stovetop.
- Freezing: You can freeze the assembled dish before baking. Just cover it tightly and it will be good for up to two months. Thaw in the fridge overnight before baking.
- Pairing: Serve with a side salad or steamed vegetables to balance the richness of the mac and cheese.
- Spice it Up: If you enjoy a bit of heat, add red pepper flakes or a dash of hot sauce to the cheese mixture.
- Vegetarian Option: For a vegetarian version, substitute beef broth with vegetable broth. It will still be incredibly flavorful!
