  • 2 tablespoons brown sugar
  • 1 tablespoon whole black peppercorns

Method
 

  1. Start by combining the soy sauce, white vinegar, half of the minced garlic, and the bay leaves in a bowl. This mixture is the heart of your marinade. Make sure to whisk it well to incorporate all the flavors.
  2. Next, take your chicken thighs and place them in the marinade. Ensure that every piece is well-coated. Cover the bowl and refrigerate for at least 20 minutes—longer if you can wait, as this will enhance the flavors. If you have the time, marinating overnight is even better.
  3. In a large skillet, heat the vegetable oil over high heat. Once hot, add the marinated chicken, searing it on both sides until golden brown. This step develops a lovely crust and adds depth of flavor. Once browned, set the chicken aside, but don’t discard the marinade.
