Ingredients
  

  • 2 cups cooked chicken cubed, about 3 chicken breasts
  • 1 (16-ounce) box Penne Pasta
  • 1 pint heavy whipping cream
  • 4 ounces cream cheese
  • ½ cup grated parmesan cheese
  • 1 packet Hidden Valley Dips Fiesta Ranch mix
  • 1 (15-ounce) can black beans drained and rinsed
  • 2 cups mozzarella cheese shredded
  • sliced green onions
  • diced tomatoes

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit. Prepare a 9x13-inch baking dish by spraying it with cooking spray. Set aside.
  2. Cook the penne pasta according to package directions. Drain, and set aside.
  3. In a medium saucepan add the heavy whipping cream and cream cheese. Heat over medium heat, stirring until the cream cheese has melted.
  4. Whisk in the grated parmesan cheese and Fiesta Ranch mix.
  5. In a large mixing bowl, add the cooked pasta and cream sauce. Toss the noodles until well-coated. Add the cooked chicken and black beans.
  6. Spoon mixture into prepared pan. Top with mozzarella cheese. Bake for 20-25 minutes until heated through and the top is bubbly.
  7. Add optional toppings and serve.
