  • 1 cup white beans rinsed and drained
  • 1/2 cup mashed sweet potato puree or butternut squash puree or pumpkin puree
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • salt to taste
  • onion powder to taste (optional)
  • garlic powder to taste (optional)
  • grated Parmesan optional to taste

Method
 

  1. Begin by gathering all your ingredients and placing them within reach. This will streamline your cooking process and make it more enjoyable.
  2. In a blender, combine the crushed tomatoes, white beans, mashed sweet potato puree, and Italian seasoning. Blend until smooth, ensuring that the mixture is well combined.
  3. In a medium pot, heat the olive oil over medium heat. Once hot, pour in your blended tomato mixture. Stir it regularly, allowing it to warm through for about five to ten minutes.
  4. As the sauce warms, prepare the pasta. In a separate pot, bring water to a boil. Add the pasta and cook according to the package directions until al dente. Drain the pasta once cooked.
  5. Return the drained pasta to the pot and pour the warmed sauce over it. Stir gently to combine, making sure every piece of pasta is coated.
