Ingredients
  

  • 1 teaspoon Cumin
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Chili Powder
  • 1 teaspoon Kosher Salt
  • Freshly Ground Black Pepper to taste
  • Cooking Spray
  • 10 ounces Mild Red Enchilada Sauce (I used my homemade enchilada sauce)
  • 1 ½ pounds Boneless Skinless Chicken Breasts cut in half lengthwise
  • 14 ounces Mild Green Chilis
  • 1 cup Reduced Fat Shredded Mexican Cheese Blend
  • 1 large Avocado yield 6-ounces, cubed
  • Chopped Cilantro for garnish

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit. This will ensure that your roll-ups cook evenly and develop a nice golden color on top.
  2. In a small bowl, mix together 1 teaspoon of cumin, 2 teaspoons of dried oregano, 1 teaspoon of garlic powder, ½ teaspoon of chili powder, 1 teaspoon of Kosher salt, and a dash of black pepper. This spice blend will elevate the flavor of your chicken beautifully. Rub this mixture generously over both sides of each piece of chicken.
  3. Next, take a small oval or rectangular baking dish and spray it with cooking spray. Pour a thin layer of enchilada sauce on the bottom to prevent sticking and add flavor.
  4. Now, lay your seasoned chicken pieces cut side up on a clean work surface. Place about 2 teaspoons of green chilis and 1 ½ tablespoons of cheese in the center of each piece.
  5. Carefully roll up each piece of chicken tightly, making sure to keep the filling inside. Set them seam side down in the baking dish. This helps the roll-ups hold their shape while baking.
  6. Once all your chicken is rolled up and in the dish, pour the remaining enchilada sauce over the top, followed by any leftover cheese and green chilis. This extra layer will create a delicious topping.
  7. Cover the baking dish with foil and bake in the preheated oven for 30 minutes. This steaming process helps keep the chicken moist.
  8. After 30 minutes, remove the foil and continue baking for an additional 10 to 15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  9. Once out of the oven, top each roll-up with a few cubes of avocado and sprinkle with cilantro before serving. The avocado not only adds flavor but also a refreshing contrast.
