Ingredients
  

  • 2 eggs
  • cups eggnog (not low fat)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter at room temperature
  • cups all-purpose flour
  • 1 box white chocolate pudding mix (3.4 ounces)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • 1 cup sifted confectioners sugar
  • 2 tablespoons eggnog
  • teaspoon ground nutmeg

Method
 

  1. Preheat your oven to 350°F (175°C) and grease your baking pans.
  2. Using the paddle attachment in your mixer, mix the eggs, eggnog, sugar, vanilla, and butter.
  3. In a separate bowl, sift together the flour, pudding powder, baking powder, salt, and nutmeg.
  4. Gradually add the sifted dry ingredients to the wet mixture in your mixer.
  5. Pour the batter into your greased pan(s).
  6. Bake the mini loaves for about 30 minutes and the regular loaf pan will take about 45-55 minutes.
  7. Whisk glaze ingredients.
  8. Pour over the cooled eggnog bread.
