Preheat your oven to 375 degrees F.
Pat the chicken thighs or drumsticks dry with a paper towel, seasoning them generously with kosher salt and pepper.
In a cast iron skillet, heat the olive oil over medium heat until it’s shimmering.
Add the seasoned chicken to the pan, searing it for 1 to 2 minutes on each side until it’s golden brown.
Once seared, drop in the butter, letting it sizzle and brown slightly.
Add the garlic and both the rosemary and thyme. Use a spoon to scoop up the melted butter and baste the chicken with it.
Turn off the heat and transfer the skillet to your preheated oven. Cook for 15 to 20 minutes until the internal temperature of the chicken reaches 165 degrees F.
Once done, remove the skillet from the oven and spoon the juices from the pan over the chicken.
Finally, spritz with fresh lemon juice before serving.
