Ingredients
  

  • 1 whole onion cut in half and then cut into slices
  • 1 whole bell pepper cut into slices
  • 1 can black beans rinsed
  • 1 package chicken breasts 3-4 breasts
  • 1 small can chopped green chilis
  • 2 packets taco seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Method
 

  1. Start by placing half of the onions in the bottom of your crockpot. You want to create a flavorful base. The onions will caramelize slightly as they cook, releasing their sweetness.
  2. Add half of the bell pepper slices and half the can of black beans on top of the onions. This layering helps the flavors to meld together.
  3. Next, lay the chicken breasts right over the top of the layered veggies. This positioning allows the juices from the chicken to soak into the vegetables below.
  4. Cover the chicken breasts with the remaining onions, bell pepper, and black beans. This ensures that every bite will be packed with flavor.
  5. Open the can of chopped green chilis and sprinkle them over the top. This adds a nice kick to the dish.
  6. Sprinkle both packets of taco seasoning, the salt, and black pepper over everything. Don’t be shy! Give it a little stir to combine the seasonings with the ingredients underneath.
  7. Now, place the lid on the crockpot, set it to low, and let it cook for 8 hours. This is where the magic happens! The long, slow cooking allows all the flavors to develop.
  8. After 8 hours, turn off the crockpot. Carefully remove the chicken breasts and transfer them to a cutting board. Use two forks to shred the chicken; it should come apart easily if it's cooked right.
  9. Place the shredded chicken back into the crockpot and stir it with the juices. Let it rest for 15 to 30 minutes to absorb the flavors.

  • Tip 5: To shred chicken, put the chicken on the cutting board, use two forks facing away from one another and pull the chicken in opposite directions. Catch the juice that runs out and put it all back in the crockpot.
