Ingredients
  

  • 2 cups rotisserie chicken, shredded
  • ½ cup shredded cheese, any kind
  • 1 small green onion, diced
  • ½ cup ranch dressing
  • 4 large flour tortillas, spinach, whole wheat, or gluten-free
  • 2 cups shredded lettuce, optional
  • Fruit and veggies of your choice

Method
 

  1. In a large bowl, mix the rotisserie chicken with the shredded cheese, green onion, and ranch dressing until combined.
  2. Place the flour tortillas onto a large cutting board and top each with a portion of the chicken mixture and shredded lettuce. Fold and tuck the sides in before rolling tightly.
  3. Wrap with a paper towel or plastic wrap to keep the filling intact. Cut each wrap in half and pack it into a compartmentalized lunch container.
  4. Add your choice of fruit and veggies to the empty compartments. Close the container and place it in a lunch bag with an ice pack.
