Ingredients
  

  • 2 cups Water
  • 1 cup Uncooked Quinoa
  • 1.5 cups Baby Kale
  • 1 small head Broccoli chopped
  • 2 small Cooked Chicken Breasts chopped or shredded
  • 1 tablespoon Flour may use whole wheat
  • 1 tablespoon Butter
  • 1 cup Milk I used 2%
  • 0.5 cup Shredded Gouda Cheese
  • 0.75 cup Shredded Cheddar Cheese divided in half
  • 0.25 cup Butter melted
  • 0.5 cup Hot Sauce I used Franks
  • 0.5 teaspoon Seasoned Salt
  • 0.25 teaspoon Pepper
  • 0.25 cup Crumble Blue Cheese
  • 1 tablespoon Fresh Cilantro chopped, for garnish
  • 1 tablespoon Green Onions chopped, for garnish

Method
 

  1. Begin by placing quinoa in a fine-mesh strainer and rinsing it thoroughly under running water. This simple step helps remove the natural coating, which can cause a bitter taste.
  2. Transfer the rinsed quinoa to a medium saucepan. Add water and bring to a boil. Once boiling, reduce the heat to medium-low. Layer the chopped kale and broccoli right on top of the water, being careful not to stir. Cover the pot and let it simmer for about 15 to 20 minutes or until the water is absorbed.
  3. After the cooking time, remove the saucepan from heat and let it sit, covered, for 5 minutes. This resting period allows the quinoa to fluff up nicely. Using a fork, fluff the quinoa and gently stir in the cooked chicken. Set aside.
  4. In a separate medium saucepan, preheat over medium heat. Add the butter. Once it melts and becomes bubbly, add the flour. Whisk this together to create a roux, cooking for 1 to 2 minutes until it turns a light golden color.
  5. Next, pour in the milk and lower the heat. Stir continuously until the mixture thickens. This is where the magic happens! Once thickened, add the gouda cheese and half of the cheddar cheese. Stir until smooth and creamy.
  6. Remove the saucepan from heat and stir in the melted butter, hot sauce, seasoned salt, and pepper. This sauce is what ties everything together, adding that creamy and spicy flavor we all love.
  7. Pour the sauce over the quinoa mixture and mix well to combine. Make sure everything is coated beautifully.
  8. Spray an 8x8 or 9x9 baking dish with non-stick spray. Pour the entire mixture into the dish, spreading it evenly. Top with the remaining cheddar cheese, either in slices or shredded, for that gooey cheesy topping.
  9. Bake in the preheated oven at 350 degrees F for 10 to 15 minutes. After that, turn on the broiler and broil for 1 to 2 minutes, or until the cheese is golden and bubbly. Keep an eye on it to avoid burning!
  10. Once done, remove from the oven and sprinkle with blue cheese, fresh cilantro, and chopped green onions. Allow it to sit for five minutes before serving. This time allows the flavors to meld perfectly.
