  • ¼ cup Chopped Green Bell Pepper
  • ¼ cup Chopped Red Bell Pepper
  • 1 cup Chopped Cooked Chicken
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 large Egg, Lightly Beaten
  • ¼ cup Mayonnaise
  • 1 tablespoon Worcestershire Sauce
  • ¼ cup Chopped Cilantro

Method
 

  1. Start by gathering all your ingredients. Have your panko bread crumbs, flour, bell peppers, and chicken ready on your countertop.
  2. In a mixing bowl, combine ½ cup panko bread crumbs and ¼ cup all-purpose flour thoroughly. This mixture will form the base of your croquettes.
  3. Add in the chopped green bell pepper, chopped red bell pepper, and 1 cup chopped cooked chicken. Make sure the chicken is shredded or finely chopped for even distribution.
  4. Next, sprinkle in ½ teaspoon garlic powder, ½ teaspoon salt, ¼ teaspoon pepper, and mix well. This step is crucial for ensuring each bite is full of flavor.
  5. In a separate bowl, lightly beat 1 egg. Add the beaten egg to the mixture along with ¼ cup mayonnaise and 1 tablespoon Worcestershire sauce.
  6. Mix everything well until fully incorporated. You want a consistent mixture that can hold its shape.
  7. Now, take a small portion of the mixture and shape it into patties, about 2 inches wide and ½ inch thick. You should be able to make about 6 to 8 croquettes.
  8. Heat oil in a large skillet over medium-high heat. Make sure the oil is hot enough so that when you add the croquettes, they sizzle.
  9. Carefully add the patties to the skillet and cook for about 2 to 3 minutes on each side, or until they are golden brown. Watch for that lovely color that signals they are ready to flip.
  10. Once cooked, remove the croquettes from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve them hot and enjoy your Easy Chicken Croquettes!
