Ingredients
  

  • 1 lb chow mein noodles or yakisoba noodles
  • 1 lb boneless skinless chicken breasts sliced into 1/2-inch thick strips
  • 2 tablespoons vegetable oil
  • 1 cup red bell pepper thinly sliced
  • 3 cups napa cabbage thinly sliced
  • 1 cup matchstick carrots
  • 1/2 cup green onions diced
  • 1 tablespoon ginger minced
  • 4 cloves garlic minced
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce low-sodium
  • 3 tablespoons oyster sauce
  • 1 tablespoon white granulated sugar
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon sesame oil
  • Sesame seeds for garnish
  • Green onions for garnish

Method
 

  1. Prepare the noodles according to package directions and set aside. It’s essential to have them cooked just right as they will be tossed with the rest of the ingredients later.
  2. In the meantime, in a medium bowl, whisk together all SAUCE ingredients and set aside. This sauce will be the flavorful backbone of your dish—make sure it’s well mixed!
  3. Heat 1 tablespoon of vegetable oil in a wok or large deep non-stick skillet over medium-high heat. You want it hot enough to get a good sear on the chicken.
  4. Once hot, add the chicken (working in batches if needed) and cook for 3 to 4 minutes on each side until browned. You’re looking for a nice golden color. Transfer the cooked chicken to a plate.
  5. Reduce the heat slightly and add the remaining 1 tablespoon of vegetable oil. Then, add the carrots and sauté for about 5 minutes. You want them tender but still crunchy.
  6. Next, add the napa cabbage and red bell pepper and sauté for an additional 3 to 5 minutes. The veggies should be crisp-tender and vibrant.
  7. Finally, add the green onions, garlic, and ginger, sautéing for 1 to 2 minutes longer until fragrant. You should start to smell that irresistible aroma!
  8. Now, toss in the cooked noodles and browned chicken, then pour the SAUCE mixture on top. Toss well to coat everything evenly. Make sure the noodles are heated through and all the components are well combined.
