Ingredients

  • 4 cups cooked chopped chicken
  • 1 10.5-oz can Unsalted Cream of Mushroom Soup
  • 1 10.5-oz can Unsalted Cream of Chicken Soup
  • 8 oz sour cream
  • 2 tbsp taco seasoning
  • 1 10-oz can Rotel diced tomatoes and green chiles, drained
  • 1 11-oz can corn, drained
  • 3 cups shredded Mexican cheese blend, divided
  • 1 9.25-oz bag nacho cheese Doritos, crushed

Equipment

  • Mixing bowls
  • 9×13 inch baking dish

Method

  1. Preheat your oven to 350ºF. It’s essential to have your oven hot and ready to ensure even cooking. While it warms up, you can prep your pan.
  2. Lightly spray a 9×13-inch baking dish with cooking spray. This will prevent the casserole from sticking and ensure easy serving.
  3. Crush the entire bag of Doritos and reserve ¼ cup of the crumbs for the top. The remaining crumbs will create a crunchy base.
  4. Cover the bottom of the prepared pan with the crushed Doritos. This layer is crucial as it sets the foundation for your casserole.
  5. In a large bowl, mix together the cream of chicken soup, cream of mushroom soup, sour cream, and taco seasoning. Stir until well combined for a creamy mixture.
  6. Add the drained Rotel tomatoes and green chiles, 2 cups of the shredded cheese, chopped chicken, and drained corn. Stir gently to combine all the ingredients, ensuring every bit is coated.
  7. Spread the chicken mixture evenly over the layer of Doritos in the casserole dish. Make sure to cover the chips completely, so they don't burn during baking.
  8. Top with the reserved crushed Doritos and the remaining shredded cheese. This will form a delightful, cheesy crust.
  9. Bake in the preheated oven for 30 to 35 minutes, or until bubbly and golden brown. Keep an eye on it; the cheese should melt and start to lightly brown.
