  • 1 pie crust 19-inch pie crust gluten-free, if desired
  • 2 large eggs
  • 15 ounces pumpkin puree canned or 2 cups of pureed cooked pumpkin
  • 1 teaspoon vanilla extract
  • 3/4 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 1-1/2 teaspoons pumpkin pie spice
  • 1 cup coconut milk

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. In a large bowl, beat together the eggs, pumpkin puree, vanilla extract, brown sugar, salt, and pumpkin pie spice until they’re smooth and well combined.
  3. While gently stirring, add the coconut milk into the mixture and mix until everything is combined.
  4. Pour the prepared filling into your pie crust.
  5. Place the pie in the oven and bake for 15 minutes.
  6. After 15 minutes, reduce the oven temperature to 350 degrees Fahrenheit and continue baking for an additional 35 to 50 minutes.
  7. Once baked, transfer the pie to a cooling rack. Let it cool completely before moving it to the refrigerator.
  8. If you’re not serving immediately, store the pie in the refrigerator.
