Ingredients

  • 6 Tbsp Butter melted
  • cups Sugar divided
  • 1 cup All-purpose flour
  • tsp Baking powder
  • ½ tsp Salt
  • ½ cup Whole milk
  • 6 Tbsp Unsweetened cocoa powder divided
  • 1 tsp Vanilla extract
  • 1 cup Mini chocolate chips
  • cups Boiling water

Equipment

  • 8-inch Square Cake Pan

Method

  1. Preheat your oven to 350ºF. This is a crucial step for even baking. While the oven warms up, gather your ingredients and get ready to create something magical.
  2. In a medium bowl, combine ¾ cup of sugar, flour, baking powder, salt, milk, 2 Tbsp of cocoa powder, and vanilla. Whisk the mixture until smooth. You’re looking for a nice, thick batter that exudes a delightful chocolate scent.
  3. Next, pour the melted butter into your 8-inch square cake pan. Then gently pour the prepared batter over the melted butter. It's crucial to not mix them together; the butter should remain underneath to create a lovely sauce later.
  4. In a separate bowl, combine the remaining 1 cup of sugar, 4 Tbsp of cocoa powder, and mini chocolate chips. Sprinkle this mixture evenly over the batter. This will add wonderful chocolate pockets within the cobbler.
  5. Now, slowly pour the boiling water over the top of the batter. This step is key to achieving that gooey chocolate sauce. Don’t stir it; just let it sit. The magic happens in the oven.
  6. Place the pan in the preheated oven and bake for 40 to 45 minutes. You’ll know it’s ready when the cobbler looks set on top. Be careful not to overcook it; we want that luscious chocolate sauce underneath!
  7. Once baked, remove from the oven and allow it to cool slightly. This rest time helps the cobbler firm up a bit, but it’s best served warm.
  8. To serve, scoop portions into bowls, ensuring you get that saucy chocolate goodness with each spoonful. Top with a scoop of vanilla ice cream for the ultimate indulgence!
  9. Enjoy your Chocolate Cobbler with friends and family, and don’t be surprised if everyone asks for seconds. It’s too good to resist!
