Ingredients
  

  • 1 medium spaghetti squash
  • to taste olive oil
  • 3 cups your favorite homemade chili
  • 2/3 cup freshly shredded cheddar cheese
  • cilantro, sour cream (or Greek yogurt), chives, tomatoes, avocados Optional toppings.

Method
 

  1. Preheat your oven to 375 degrees F. Getting the oven hot is crucial for roasting the squash effectively.
  2. Slice off the stem of the spaghetti squash. Using a sharp knife, carefully cut the squash lengthwise in half. This will give you two long halves.
  3. Remove the seeds and gunk inside the squash. I like to use a spoon for this step, scraping it clean until you have a nice hollow shell.
  4. Brush the insides of the squash with olive oil and sprinkle with salt and pepper. This will enhance the flavor and aid in roasting.
  5. Place the squash halves cut side down on a baking sheet. This method allows them to roast evenly and develop a rich flavor.
  6. Roast the squash for 40 to 50 minutes, checking around the 35-minute mark. You want it to be tender enough to scrape the strands with a fork.
  7. While the squash is roasting, prepare your chili. If you’re using leftovers, simply reheat it on the stovetop.
  8. Remove the squash from the oven. Use hot pads to flip them over carefully. The insides should be soft and tender.
  9. Fill each half with the warm chili. Make sure to pack it in for a hearty serving!
  10. Top each half with cheddar cheese, and if desired, add fresh toppings like cilantro or sour cream. This adds a pop of color and flavor.
