Method
 

  1. Preheat the oven to 420 degrees or the grill to medium-high heat. This step is essential for achieving that perfect cook on your chicken.
  2. In a food processor, combine all the ingredients except the chicken and blend until smooth to create a marinade.
  3. Rub the marinade all over the chicken, ensuring to get under the skin for maximum flavor.
  4. Cook the chicken in the oven or on the grill until done, about 35 to 45 minutes, depending on the cut.
  5. While the chicken cooks, prepare the Harissa sauce by blending all ingredients together in a blender and setting it aside.
  6. For the Tahini sauce, whisk the tahini paste with water until smooth, then add remaining ingredients to taste.
  7. Mix diced tomatoes and herbs together, seasoning with salt and pepper to enhance flavor.
  8. Once the chicken is cooked, let it rest before slicing to retain moisture.
  9. Assemble the platter by layering grilled naan at the bottom, adding chicken and drizzling sauces on top.
  10. Top with fresh salad and herbs, serve immediately, and enjoy your creation!

  • Tip 1: For my chicken shawarma, I like to use drumsticks, but feel free to swap them for any other piece of chicken you enjoy.
