Ingredients
  

  • 3 cups Chicken breasts cooked and chopped
  • 4 cups Broccoli florets cooked
  • 1 10.5-ounce can Cream of chicken soup
  • cup Chicken broth
  • ½ teaspoon Yellow curry powder
  • ½ cup Shredded cheddar cheese
  • 3 tablespoons Panko breadcrumbs
  • 3 tablespoons Grated Parmesan cheese
  • 1 tablespoon Butter melted
  • Steamed rice for serving (if desired)

Method
 

  1. Spray a 9-inch pie plate with nonstick spray and preheat the oven to 425℉.
  2. Place the cooked and chopped chicken breasts in the bottom of the pie dish and top with the cooked broccoli florets. Sprinkle with salt and pepper.
  3. In a medium bowl, whisk together the cream of chicken soup, chicken broth, and yellow curry powder. Pour this mixture evenly over the broccoli and then sprinkle with the cheddar cheese.
  4. In a small bowl, combine the Panko breadcrumbs, Parmesan cheese, and melted butter. Sprinkle over the top of the casserole.
  5. Bake for 20 minutes until bubbly and golden. Serve over steamed rice, if desired.
