Ingredients
  

  • 5 (1/2 inch) thick rings Fresh pineapple
  • 1 tablespoon Coconut oil
  • 1 tablespoon Unsalted butter
  • 1 tablespoon Light brown sugar
  • 1/4 teaspoon Salt
  • 1 (14-ounce) can Light coconut milk
  • 8 ounces Greek yogurt
  • 1/4 teaspoon Ground cardamom
  • a pinch Cinnamon

Method
 

  1. Heat a large skillet over medium-high heat and add coconut oil and butter. Once melted, add in 4 pineapple rings and sprinkle brown sugar and salt over top. Cook until golden brown and caramely on both sides, about 5 minutes per side. Remove and let cool slightly.
  2. Combine caramelized pineapple, coconut milk, yogurt, cardamom and cinnamon in a blender and puree until smooth. Pour into glasses and sprinkle a tiny bit of cardamom on top. Cut the remaining pineapple slice in half and add it to the top of the shake. Serve.

Notes

  • Storage: Store any leftover lassi in an airtight container in the refrigerator for up to 2 days. However, it’s best enjoyed fresh!
  • Freezing: You can freeze the lassi into popsicle molds for a refreshing treat on hot days. Just blend and pour into molds before freezing.
  • Flavor Variations: Experiment with different fruits! Mango, berries, or even a mix of fruits can create exciting new flavor profiles.
