Ingredients

  • 1/4 cup Sugar
  • 2 1/4 cups Milk

  • 2 cups Strawberries
  • 2 tablespoons Dark Chocolate Chips

Method
 

  1. In a large bowl, combine the whole wheat flour, baking powder, salt, and sugar. Whisk together until well mixed, ensuring there are no lumps.
  2. In a separate bowl, whisk together the milk, olive oil, and eggs until fully combined. It’s important that the mixture is uniform to achieve fluffy pancakes.
  3. Pour the wet ingredients into the dry mixture slowly, stirring gently. Mix until just combined; it’s okay if the batter is a bit lumpy—overmixing can lead to tough pancakes!
  4. Heat a skillet over medium-high heat and spray with cooking spray or lightly grease it with a bit of oil. You want the skillet hot enough that water droplets sizzle when flicked on.
  5. Pour about 1/4 cup of batter onto the skillet to form a circle for the bunny's body. Cook until you see bubbles forming on the surface and the edges start to look set.
  6. For the bunny's feet, pour a smaller amount of batter to create two oval shapes, placing them next to the larger pancake.
  7. For the ears, pour approximately 2 tablespoons of batter in two separate spots above the main pancake. Make sure they are spaced out to form a cute bunny shape.
  8. Repeat this process until all the batter is used up. Adjust the heat if necessary to prevent burning.
  9. Once cooked, arrange the pancakes on a plate to resemble a bunny. Use a slice of strawberry for each foot and place chocolate chips on them to create the pads. Use three chocolate chips for the eyes and nose.
  10. Finally, add a spritz of whipped cream or yogurt to make a fluffy tail. Serve immediately with extra strawberry slices on the side.
