Ingredients
  

  • 1 can black beans rinsed and drained
  • 1 small red bell pepper chopped
  • 1 cup corn fresh or frozen
  • 1/2 cup cilantro chopped
  • 1 tablespoon lime juice
  • 1 small green onion sliced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Kosher salt and black pepper to taste
  • 20 6-inch corn tortillas
  • 1 1/2 cups shredded cheese Mexican or pepper jack
  • chopped lettuce

  • Pico de gallo
  • Guacamole
  • Sour cream or plain Greek yogurt

Method
 

  1. Preheat the oven to 425 degrees F. Spray a large baking sheet with nonstick cooking spray and set aside.
  2. In a medium bowl, combine the black beans, red pepper, corn, cilantro, green onion, lime juice, chili powder, cumin, garlic powder, paprika, salt, and pepper. Mix well.
  3. To help the tortillas roll better, dampen two paper towels and place two tortillas at a time in between them. Microwave for 20 to 30 seconds.
  4. Remove the tortillas and roll them up tightly with a heaping tablespoon of the black bean mixture in the center and sprinkle with shredded cheese.
  5. Place the taquitos seam side down on the prepared baking sheet. Continue until all are rolled.
  6. Generously spray the taquitos with nonstick cooking spray.
  7. Bake for 17 to 23 minutes, or until golden brown and crispy.
  8. Remove from the oven and serve warm with desired toppings.

Notes

  • Storage: Store leftover taquitos in the fridge for up to three days.
  • Freezing: You can freeze uncooked taquitos. Bake directly from frozen.
  • Variations: Add shredded carrots or zucchini for more veggies.
