  • 2 lbs chicken breasts boneless, skinless
  • 2 tbsp olive oil divided
  • Salt and pepper

  • ¼ cup yellow mustard
  • ¼ cup stone-ground mustard
  • ¼ cup honey
  • 2 tbsp Italian dressing
  • 1 tsp garlic powder
  • 1 tsp dried oregano

  1. Preheat your oven to 400°F. This is a crucial step to ensure even cooking and perfect browning of the chicken.
  2. Brush about 1 tablespoon of olive oil all over the chicken breasts. Make sure to coat them evenly; this helps the seasonings to adhere.
  3. Liberally sprinkle salt and pepper on the chicken. Don’t hold back; the seasoning is what brings out the flavor!
  4. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Once hot, carefully add the chicken breasts, cooking until they are lightly browned on both sides. Remember, they won’t be cooked through yet, so keep an eye on their color.
  5. Lightly spray your baking dish with cooking spray or a small amount of oil. This step ensures that your chicken won’t stick!
  6. Place the chicken breasts in the bottom of the dish. It’s perfectly fine if they overlap slightly; they will cook just fine.
  7. In a separate bowl, mix together the honey mustard sauce ingredients. Combine the yellow mustard, stone-ground mustard, honey, Italian dressing, garlic powder, and dried oregano until fully combined. This sauce is going to be the star of the dish!
  8. Pour the sauce all over the top of the chicken, making sure it’s evenly covered. The sauce will soak into the chicken as it cooks, making it super flavorful.
  9. Cover the dish with foil and bake in the oven for about 25 minutes. If you’re using extra-large chicken breasts, let them bake for 30 minutes.
  10. Uncover the dish and continue baking until the chicken reaches an internal temperature of 160 to 165°F. This ensures that your chicken is fully cooked and safe to eat.
  11. Remove the chicken from the oven and let it rest for about 5 to 10 minutes. This resting period allows the juices to redistribute, making your chicken tender and juicy.
