  • 1 pound Asparagus spears trimmed
  • 1 spray Cooking spray
  • 1/3 cup Panko or breadcrumbs
  • 1/4 cup Parmesan cheese grated
  • 2 teaspoons Lemon rind grated
  • 1 teaspoon Canola oil
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Kosher salt
  • 2 tablespoons Lemon juice
  • 1 teaspoon Unsalted butter melted

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine Panko (or breadcrumbs), Parmesan cheese, lemon rind, canola oil, black pepper, and kosher salt.
  3. Prepare a baking sheet by lining it with foil or parchment paper.
  4. Arrange the asparagus spears on the baking sheet in a single layer.
  5. Sprinkle the breadcrumb mixture evenly over the asparagus.
  6. Bake the asparagus in the preheated oven for about 8 minutes.
  7. After 8 minutes, carefully remove the baking sheet from the oven. Drizzle with lemon juice and melted butter.
  8. Return to the oven and bake for an additional 4 minutes.
  9. Remove from the oven and let cool slightly before serving.
