Ingredients

  • 2 cups almond flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 4 eggs lightly whisked
  • 1/3 cup pure maple syrup
  • 1 tsp vanilla extract
  • 3/4 cup 100% pumpkin puree
  • 3 oz 1/3-less fat cream cheese
  • 1 Tbsp maple syrup
  • 1-2 Tbsp almond milk or milk of choice

Equipment

  • Frying pan
  • Oven
  • Whisk
  • Mixing Bowl
  • Baking Sheet

Method

  1. Preheat your oven to 350 degrees F. This is essential to ensure that your bread bakes evenly.
  2. In a large mixing bowl, whisk together almond flour, baking powder, baking soda, pumpkin pie spice, cinnamon, nutmeg, and salt. This mixture is the foundation of your bread.
  3. In a separate bowl, combine eggs, maple syrup, vanilla extract, and pumpkin puree. Whisk until well-combined and smooth.
  4. Pour the wet ingredients into the dry mixture. Stir gently until no lumps remain, ensuring a uniform batter.
  5. Grease a 9×5-inch loaf pan and pour the batter into it, smoothing the top with a spatula.
  6. Place the loaf pan in the preheated oven and bake for 45 to 50 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
  7. Once baked, remove the loaf from the oven and allow it to cool in the pan for about 5 minutes.
  8. Carefully remove the bread from the pan and transfer it to a wire rack to cool completely.
  9. For the cream cheese glaze, microwave the cream cheese in a small bowl for 30 seconds to soften it. Stir in maple syrup and almond milk until smooth and runny.
  10. Drizzle the glaze over the cooled Almond Flour Pumpkin Bread, slice, and serve. Enjoy each delicious bite!
