Ingredients
  

  • 1 ½ lbs chicken breast
  • 1 cup broccoli florets
  • 1 cup chopped bell peppers
  • 1 cup chopped zucchini
  • 1 small onion
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes
  • parsley for garnish

Method
 

  1. Slice the chicken breast into ½ inch thick strips, then each strip into 3 bite-size pieces. Place chicken in a bowl.
  2. In a small bowl, mix together the seasoning: salt, pepper, paprika, onion and garlic powders, Italian seasoning.
  3. Pour 1 tablespoon of oil over chicken and sprinkle half of the seasoning mix. Stir with a spoon until each piece is seasoned.
  4. Chop vegetables and place in a bowl. Toss with remaining oil and seasoning.
  5. Combine chicken and vegetables.
  6. Preheat air fryer to 400° for 3 minutes.
  7. Arrange chicken and veggies in the air fryer basket.
  8. Cook for 5 minutes, shake the basket and cook for 4 to 5 minutes more.
  9. Serve garnished with crushed red pepper flakes and parsley.
